Description

A hearty and flavorful vegetarian lasagna made with layers of fresh vegetables, ricotta, and marinara sauce.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 cup spinach
  • 2 cups marinara sauce
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Heat the olive oil in a pan and sauté the onion and garlic until fragrant.
  4. Add the zucchini and bell pepper; cook until tender.
  5. Stir in the spinach until wilted, then season with salt and pepper.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
