Easy walking tacos with seasoned ground beef, tomatoes, beans, corn chips, cheese, sour cream, and green onions.
Ingredients

1 teaspoon olive oil
1 pound lean ground beef
1.25 ounce packet taco seasoning
1/4 teaspoon black pepper
1 10 ounce can diced tomatoes with green chilis
1 15 ounce can Ranch Style beans
6 1 ounce packages corn chips
Shredded cheese, for topping
Sour cream, for topping
Sliced green onions, for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and cook for 6 to 8 minutes, breaking it into crumbles.
- Drain excess grease if needed.
- Stir in taco seasoning, black pepper, diced tomatoes with green chilis, and beans.
- Bring to a boil, then simmer uncovered for about 20 minutes until thickened.
- Open the corn chip bags just before serving.
- Spoon beef mixture into each bag and top with cheese, sour cream, and green onions.
Notes
Add the filling right before serving so the corn chips stay crunchy.
