Description

Easy walking tacos with seasoned ground beef, tomatoes, beans, corn chips, cheese, sour cream, and green onions.


Ingredients

1 teaspoon olive oil

1 pound lean ground beef

1.25 ounce packet taco seasoning

1/4 teaspoon black pepper

1 10 ounce can diced tomatoes with green chilis

1 15 ounce can Ranch Style beans

6 1 ounce packages corn chips

Shredded cheese, for topping

Sour cream, for topping

Sliced green onions, for serving


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook for 6 to 8 minutes, breaking it into crumbles.
  3. Drain excess grease if needed.
  4. Stir in taco seasoning, black pepper, diced tomatoes with green chilis, and beans.
  5. Bring to a boil, then simmer uncovered for about 20 minutes until thickened.
  6. Open the corn chip bags just before serving.
  7. Spoon beef mixture into each bag and top with cheese, sour cream, and green onions.

Notes

Add the filling right before serving so the corn chips stay crunchy.
