- 2 cups cooked chicken, shredded
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ginger, grated
- 1 cup fresh vegetables (such as bell peppers, carrots, and cucumbers), sliced
- 4 large tortillas
- Extra peanut sauce for dipping
Instructions
- In a bowl, mix together the peanut butter, soy sauce, honey, rice vinegar, garlic powder, and ginger until well combined.
- Toss the shredded chicken in the peanut sauce until fully coated.
- Lay a tortilla flat and place a portion of the chicken mixture in the center.
- Top with fresh vegetables.
- Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top to enclose the filling.
- Repeat with the remaining tortillas.
- Serve with extra peanut sauce for dipping.
Notes
Can use rotisserie chicken to save time. Add crushed peanuts or sesame seeds for extra crunch. For gluten-free, replace soy sauce with tamari.
