Description

A delightful mix of flavors and textures with creamy peanut sauce, tender chicken, and fresh vegetables wrapped in tortillas.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger, grated
  • 1 cup fresh vegetables (such as bell peppers, carrots, and cucumbers), sliced
  • 4 large tortillas
  • Extra peanut sauce for dipping

Instructions

  1. In a bowl, mix together the peanut butter, soy sauce, honey, rice vinegar, garlic powder, and ginger until well combined.
  2. Toss the shredded chicken in the peanut sauce until fully coated.
  3. Lay a tortilla flat and place a portion of the chicken mixture in the center.
  4. Top with fresh vegetables.
  5. Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top to enclose the filling.
  6. Repeat with the remaining tortillas.
  7. Serve with extra peanut sauce for dipping.

Notes

Can use rotisserie chicken to save time. Add crushed peanuts or sesame seeds for extra crunch. For gluten-free, replace soy sauce with tamari.
