Ingredients

- 1 can black beans, rinsed and drained
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 medium tortillas
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Cooking oil for frying
Instructions
- Heat a skillet over medium heat and add a splash of oil.
- Mix beans with cumin, garlic powder, salt, and pepper in a bowl.
- Spread the bean mixture on half of each tortilla.
- Sprinkle cheese on top of the bean mixture.
- Fold the tortillas in half and place in the skillet.
- Cook for 2-3 minutes on each side until golden brown and cheese is melted.

Serve with salsa or sour cream if desired.
