  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups (315g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup (225g) strawberry jam
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together softened butter and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla extract.
  4. Whisk together flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized dough balls and place them on the lined baking sheet.
  7. Create a small well in the center of each cookie ball.
  8. Spoon about ½ teaspoon of strawberry jam into each well.
  9. Bake for 12-15 minutes, or until the edges are lightly golden.
  10. Cool cookies on a baking sheet for a few minutes before transferring to a wire rack.
