A delicious and healthy broccoli cheddar soup loaded with protein and flavor, perfect for a cozy day.
Ingredients

- 4 cups fresh broccoli florets
- 1 cup low-sodium vegetable broth
- 1 cup shredded sharp cheddar cheese
- 1 cup cooked and chopped chicken breast (optional)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup unsweetened almond milk
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.
- Add the broccoli florets and cook for another 4-5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat and simmer for about 10 minutes, or until the broccoli is tender.
- If using chicken, add the chopped chicken breast to the pot now.
- Pour in the almond milk and stir well to combine.
- Blend the soup until smooth with an immersion blender or in batches in a blender.
- Return the blended soup to the pot over low heat and stir in the shredded cheddar cheese until melted.
- Season with salt and pepper to taste before serving.
Notes
For a creamier texture, add more almond milk or cream. Use different cheeses for variation.
