Description

A delicious and healthy broccoli cheddar soup loaded with protein and flavor, perfect for a cozy day.


Ingredients

  • 4 cups fresh broccoli florets
  • 1 cup low-sodium vegetable broth
  • 1 cup shredded sharp cheddar cheese
  • 1 cup cooked and chopped chicken breast (optional)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup unsweetened almond milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the broccoli florets and cook for another 4-5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat and simmer for about 10 minutes, or until the broccoli is tender.
  6. If using chicken, add the chopped chicken breast to the pot now.
  7. Pour in the almond milk and stir well to combine.
  8. Blend the soup until smooth with an immersion blender or in batches in a blender.
  9. Return the blended soup to the pot over low heat and stir in the shredded cheddar cheese until melted.
  10. Season with salt and pepper to taste before serving.

Notes

For a creamier texture, add more almond milk or cream. Use different cheeses for variation.
