Description
Mexican street corn salad with corn, cilantro, red onion, Cotija, mayonnaise, lime, and chili powder.
Ingredients

4 cups fresh corn kernels
1/4 cup chopped cilantro
1/4 cup red onion, finely diced
1/2 cup Cotija cheese, crumbled
1/3 cup mayonnaise
2 tablespoons lime juice
1 teaspoon chili powder
Salt and black pepper, to taste
Instructions
- Cook corn in a hot skillet until lightly charred.
- Let corn cool slightly.
- Whisk mayonnaise, lime juice, chili powder, salt, and pepper.
- Add corn, cilantro, red onion, and Cotija to a bowl.
- Fold in dressing.
- Taste and adjust lime, chili powder, salt, or pepper.
- Serve warm, room temperature, or chilled.
Notes
A little char on the corn gives the salad deeper elote-style flavor.
