- 4 boneless, skinless chicken breasts
- Salt (to taste)
- Pepper (to taste)
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried basil (or fresh basil for garnish)
- Fresh parsley (for garnish, optional)
Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
- Heat olive oil in a large skillet over medium-high heat.
- Add the seasoned chicken breasts to the skillet and sear for about 5–7 minutes on each side, until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds.
- Stir in chopped sun-dried tomatoes and cook for another minute.
- Pour in heavy cream and add grated Parmesan cheese. Stir to combine and bring to a simmer.
- Return the chicken to the skillet and spoon sauce over it. Simmer for about 5 minutes until the sauce thickens.
- Stir in dried basil and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley and additional Parmesan cheese if desired.
Notes
Pairs well with pasta, rice, or a fresh garden salad. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
