Description

Blend two beloved favorites into one delicious dish with these Grilled Cheese Burrito Tacos, perfect for busy weeknights or a casual lunch.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 ounces) refried beans
  • 1 cup cooked rice
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 8 large flour tortillas (burrito size)
  • 2 tablespoons butter, softened
  • Optional: sour cream, salsa, guacamole for serving

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat. Drain any excess fat.
  2. Add the taco seasoning and water to the beef. Simmer for 5-7 minutes, or until the liquid has reduced and the beef is seasoned.
  3. In a separate bowl, combine the refried beans, cooked rice, cheddar cheese, and Monterey Jack cheese. Mix well.
  4. Warm the flour tortillas for 15-20 seconds in the microwave to make them more pliable.
  5. Lay a tortilla flat. Spread about 1/4 cup of the bean and rice mixture down the center, leaving space at the ends.
  6. Spoon about 1/4 cup of the seasoned ground beef over the bean and rice mixture.
  7. Fold in the sides of the tortilla, then tightly roll it up from the bottom to form a burrito. Repeat with the remaining tortillas and fillings.
  8. Spread a thin layer of softened butter on one side of each rolled burrito.
  9. Heat a large non-stick skillet or griddle over medium heat.
  10. Place a burrito, butter-side down, in the hot skillet. Sprinkle a small amount of extra shredded cheese on top of the burrito.
  11. Cook for 3-4 minutes per side, or until the tortilla is golden brown and crispy, and the cheese on top is melted and slightly browned.
  12. Remove the grilled cheese burrito from the skillet. Repeat with the remaining burritos.
  13. Serve the grilled cheese burritos immediately with your favorite toppings like sour cream, salsa, or guacamole.

Notes

For a spicier kick, add chopped jalapeños or hot sauce. These burritos can be assembled ahead of time and frozen.
