Description
Blend two beloved favorites into one delicious dish with these Grilled Cheese Burrito Tacos, perfect for busy weeknights or a casual lunch.
Ingredients
Scale
- 1 pound ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 ounces) refried beans
- 1 cup cooked rice
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 8 large flour tortillas (burrito size)
- 2 tablespoons butter, softened
- Optional: sour cream, salsa, guacamole for serving
Instructions
- Brown the ground beef in a large skillet over medium-high heat. Drain any excess fat.
- Add the taco seasoning and water to the beef. Simmer for 5-7 minutes, or until the liquid has reduced and the beef is seasoned.
- In a separate bowl, combine the refried beans, cooked rice, cheddar cheese, and Monterey Jack cheese. Mix well.
- Warm the flour tortillas for 15-20 seconds in the microwave to make them more pliable.
- Lay a tortilla flat. Spread about 1/4 cup of the bean and rice mixture down the center, leaving space at the ends.
- Spoon about 1/4 cup of the seasoned ground beef over the bean and rice mixture.
- Fold in the sides of the tortilla, then tightly roll it up from the bottom to form a burrito. Repeat with the remaining tortillas and fillings.
- Spread a thin layer of softened butter on one side of each rolled burrito.
- Heat a large non-stick skillet or griddle over medium heat.
- Place a burrito, butter-side down, in the hot skillet. Sprinkle a small amount of extra shredded cheese on top of the burrito.
- Cook for 3-4 minutes per side, or until the tortilla is golden brown and crispy, and the cheese on top is melted and slightly browned.
- Remove the grilled cheese burrito from the skillet. Repeat with the remaining burritos.
- Serve the grilled cheese burritos immediately with your favorite toppings like sour cream, salsa, or guacamole.
Notes
For a spicier kick, add chopped jalapeños or hot sauce. These burritos can be assembled ahead of time and frozen.
