Ingredients

2 to 3 cups cooked chicken, chopped or shredded
1/2 to 3/4 cup plain Greek yogurt
1 to 2 teaspoons Dijon mustard
1 tablespoon lemon juice
1 celery stalk, chopped
2 tablespoons red onion or green onion
Salt and black pepper, to taste
Optional: grapes, apples, walnuts, almonds, cranberries, dill, parsley, or avocado
Instructions
- Stir Greek yogurt, Dijon, lemon juice, salt, and pepper in a bowl.
- Add chicken, celery, and onion.
- Stir until coated.
- Fold in optional add-ins if using.
- Taste and adjust seasoning.
- Serve chilled.
Notes
Use thick Greek yogurt so the salad does not become watery.
