Description

A flavorful and healthy chicken salad made with Greek yogurt, perfect for lunch or a light dinner.


Ingredients

  • 2 to 3 cups cooked chicken, chopped or shredded
  • ½ to ¾ cup plain Greek yogurt
  • 1 to 2 teaspoons Dijon mustard
  • A squeeze of lemon juice
  • Chopped celery
  • Red onion or green onion
  • Salt and black pepper, to taste
  • Optional add-ins: grapes, chopped apples, walnuts, sliced almonds, dried cranberries, fresh dill, parsley, diced avocado

Instructions

  1. Start with cooked chicken. If cooking fresh, let it cool for a few minutes.
  2. In a medium bowl, stir together Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
  3. Add chicken, celery, and onion. Stir until everything is coated.
  4. Add your fun stuff if using it (grapes, nuts, herbs).
  5. Taste and adjust seasoning as needed.

Notes

Store in an airtight container in the refrigerator for 3 to 4 days. For extra creaminess, add more Greek yogurt.
