- 19 oz frozen cheese tortellini
- 2 Tbsp olive oil
- 1½ lbs chicken breasts, cut into bite-sized pieces
- ½ tsp black pepper
- ½ tsp Italian seasoning
- ½ tsp paprika
- 2 Tbsp butter
- ½ cup sun-dried tomatoes (in oil), drained and sliced thin
- 3 tsp garlic, minced
- 1 cup low-sodium chicken broth
- 2 cups heavy cream
- 1 cup parmesan cheese, finely shredded
- 2 cups baby spinach, chopped
- 1 tsp additional Italian seasoning
- 1 tsp additional black pepper
- 1 tsp additional paprika
Instructions
- Prepare the chicken: Season the chicken pieces with black pepper, Italian seasoning, and paprika. In a skillet, heat olive oil over medium-high heat and cook the chicken until golden brown, about 6-8 minutes. Remove the chicken from the skillet.
- Create the sauce: In the same skillet, melt butter over medium-low heat. Add minced garlic and sun-dried tomatoes, sautéing for about 30 seconds. Pour in chicken broth, heavy cream, and the rest of the spices. Whisk continuously until the sauce bubbles. Gradually stir in parmesan until it becomes thick and creamy.
- Combine ingredients: Add the chopped spinach, cooked chicken, and the frozen tortellini to the sauce. Stir occasionally until the spinach wilts, then let it simmer for about 5 minutes.
- Garnish and serve: Plate the delicious dish hot and garnish with parsley and additional parmesan cheese. Enjoy your restaurant-quality meal right at home!
