Colorful quinoa black bean salad with bell pepper, corn, cilantro, lime juice, salt, and pepper.
Ingredients

1 cup quinoa
2 cups water
1 can black beans, rinsed and drained
1 red bell pepper, diced
1 cup corn, frozen or fresh
1/4 cup cilantro, chopped
1 lime, juiced
Salt and black pepper, to taste
Instructions
- Rinse quinoa under cold water.
- Combine quinoa and water in a pot and bring to a boil.
- Reduce heat, cover, and simmer about 15 minutes until water is absorbed.
- Fluff quinoa with a fork and let it cool.
- Combine black beans, red bell pepper, corn, and cilantro in a large bowl.
- Add cooled quinoa, lime juice, salt, and pepper.
- Toss until well mixed and serve chilled or at room temperature.
Notes
Cool the quinoa before mixing so the vegetables stay crisp.
