Description

A fresh and nutritious dish combining protein-packed quinoa, black beans, and vibrant vegetables in a zesty lime dressing.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 cup corn (frozen or fresh)
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Start by rinsing the quinoa under cold water.
  2. In a pot, combine the rinsed quinoa and water. Bring it to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes, or until all the water is absorbed.
  3. Once the quinoa is done, fluff it with a fork and let it cool.
  4. In a large bowl, combine the black beans, diced red bell pepper, corn, and chopped cilantro.
  5. Add the cooled quinoa to the vegetable mixture.
  6. Drizzle lime juice over the salad and season with salt and pepper to taste. Toss everything together until well mixed.

Notes

You can customize the salad by adding avocado, tomatoes, or diced jalapeños for additional flavor.
