Description

Colorful quinoa black bean salad with bell pepper, corn, cilantro, lime juice, salt, and pepper.


Ingredients

1 cup quinoa

2 cups water

1 can black beans, rinsed and drained

1 red bell pepper, diced

1 cup corn, frozen or fresh

1/4 cup cilantro, chopped

1 lime, juiced

Salt and black pepper, to taste


Instructions

  1. Rinse quinoa under cold water.
  2. Combine quinoa and water in a pot and bring to a boil.
  3. Reduce heat, cover, and simmer about 15 minutes until water is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. Combine black beans, red bell pepper, corn, and cilantro in a large bowl.
  6. Add cooled quinoa, lime juice, salt, and pepper.
  7. Toss until well mixed and serve chilled or at room temperature.

Notes

Cool the quinoa before mixing so the vegetables stay crisp.
