Ingredients

  • 1 medium green papaya (peeled and julienned)
  • 1 medium carrot (julienned)
  • 1 cucumber (julienned)
  • 1 red bell pepper (julienned)
  • 1/2 cup fresh mint leaves (roughly chopped)
  • 1/2 cup fresh cilantro leaves (roughly chopped)
  • 1/4 cup roasted peanuts (chopped)
  • 1 medium red chili (thinly sliced)
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon sugar
  • 1 clove garlic (minced)
  • 1 teaspoon chili flakes (optional)

Instructions

  1. Peel and julienne the green papaya, carrot, cucumber, and red bell pepper. Place all the colorful veggies into a large mixing bowl.
  2. Toss in the roughly chopped fresh mint and cilantro leaves to the bowl.
  3. Thinly slice the red chili and add it to the mix, adjusting to your spice level.
  4. In a small bowl, whisk together the fish sauce, lime juice, sugar, minced garlic, and chili flakes until the sugar dissolves.
  5. Pour the dressing over the salad mix and toss well.
  6. Sprinkle the chopped roasted peanuts on top just before serving.
