- 1 medium green papaya (peeled and julienned)
- 1 medium carrot (julienned)
- 1 cucumber (julienned)
- 1 red bell pepper (julienned)
- 1/2 cup fresh mint leaves (roughly chopped)
- 1/2 cup fresh cilantro leaves (roughly chopped)
- 1/4 cup roasted peanuts (chopped)
- 1 medium red chili (thinly sliced)
- 3 tablespoons fish sauce
- 2 tablespoons lime juice (freshly squeezed)
- 1 tablespoon sugar
- 1 clove garlic (minced)
- 1 teaspoon chili flakes (optional)
Instructions
- Peel and julienne the green papaya, carrot, cucumber, and red bell pepper. Place all the colorful veggies into a large mixing bowl.
- Toss in the roughly chopped fresh mint and cilantro leaves to the bowl.
- Thinly slice the red chili and add it to the mix, adjusting to your spice level.
- In a small bowl, whisk together the fish sauce, lime juice, sugar, minced garlic, and chili flakes until the sugar dissolves.
- Pour the dressing over the salad mix and toss well.
- Sprinkle the chopped roasted peanuts on top just before serving.
