Description

Creamy homemade potato salad with tender potatoes, eggs, celery, red onion, parsley, mayo, Dijon, and apple cider vinegar.


Ingredients

2 pounds waxy potatoes, diced

3/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

2 celery stalks, chopped

1/4 cup red onion, finely diced

3 hard-boiled eggs, chopped

2 tablespoons fresh parsley, chopped

Salt and black pepper, to taste


Instructions

  1. Boil diced potatoes in salted water until fork-tender.
  2. Drain well and cool.
  3. Whisk mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
  4. Add cooled potatoes, celery, red onion, eggs, and parsley to a bowl.
  5. Fold in dressing gently.
  6. Taste and adjust seasoning.
  7. Chill at least 1 hour before serving.

Notes

Cool potatoes before adding dressing so the salad stays creamy instead of loose.
