Ingredients

Scale
  • 1.5 kg (3 lbs) assorted meats (chicken thighs, ribs, brisket)
  • 120 ml (½ cup) olive oil
  • 60 ml (¼ cup) vinegar
  • 3 tablespoons brown sugar
  • Spices (your choice)
  • Salt and pepper
  • BBQ sauce (store-bought or homemade)

Instructions

  1. Prepare the Marinade: In a bowl, combine olive oil, vinegar, brown sugar, and spices. Mix well. Allow marinating for at least 30 minutes.
  2. Marinate the Meat: Place selected meat into a dish. Pour the marinade over the meat. Cover and refrigerate for up to 8 hours.
  3. Preheat the Grill: Heat your grill to high (around 200°C or 400°F).
  4. Cook the Meat: Remove meat from marinade. Grill for 20-30 minutes until temperature reaches 74°C (165°F) for chicken or 93°C (200°F) for pork.
  5. Baste and Finish: Brush BBQ sauce over the meat a few minutes before finishing, cook an additional 5 minutes.
  6. Rest Before Serving: Let the meat rest on a cutting board for 10 minutes before slicing.

Notes

Ensure to clean the grill before cooking to prevent sticking. Marinate longer for enhanced flavor.
