Description

A refreshing no-bake cheesecake that’s perfect for summer gatherings and easy to make at home.


Ingredients

  • 250 g (2 cups) crackers or digestive biscuits
  • 120 g (½ cup) melted butter
  • 450 g (16 oz) cream cheese
  • 100 g (1 cup) confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 60 g (¼ cup) fruit puree (optional)

Instructions

  1. Prepare the Base: In a mixing bowl, crush the crackers until they resemble fine crumbs. Mix in the melted butter until evenly combined.
  2. Press the Mixture: Press the crumb mixture firmly into the bottom of a 9-inch round springform pan. Chill in the refrigerator for at least 30 minutes to set.
  3. Prepare the Filling: Combine the cream cheese and confectioners’ sugar in a mixing bowl. Use an electric mixer on medium speed until smooth.
  4. Add Flavor: Mix in the vanilla extract and any other desired flavorings, such as fruit puree. Continue mixing until incorporated.
  5. Assemble the Dessert: Once the base is set, carefully pour the cream cheese mixture over it and spread it evenly.
  6. Chill: Cover the pan with plastic wrap and chill the dessert in the refrigerator for 2-4 hours until fully set.
