- 250 g (2 cups) crackers or digestive biscuits
- 120 g (½ cup) melted butter
- 450 g (16 oz) cream cheese
- 100 g (1 cup) confectioners’ sugar
- 1 teaspoon vanilla extract
- 60 g (¼ cup) fruit puree (optional)
Instructions
- Prepare the Base: In a mixing bowl, crush the crackers until they resemble fine crumbs. Mix in the melted butter until evenly combined.
- Press the Mixture: Press the crumb mixture firmly into the bottom of a 9-inch round springform pan. Chill in the refrigerator for at least 30 minutes to set.
- Prepare the Filling: Combine the cream cheese and confectioners’ sugar in a mixing bowl. Use an electric mixer on medium speed until smooth.
- Add Flavor: Mix in the vanilla extract and any other desired flavorings, such as fruit puree. Continue mixing until incorporated.
- Assemble the Dessert: Once the base is set, carefully pour the cream cheese mixture over it and spread it evenly.
- Chill: Cover the pan with plastic wrap and chill the dessert in the refrigerator for 2-4 hours until fully set.
