Strawberry Cream Cheese Muffins

Description

Delicious muffins filled with fresh strawberries and a creamy cheese filling, perfect for breakfast or as a snack.


Ingredients

  • 1 cup fresh strawberries, chopped
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, baking powder, and salt in a bowl.
  3. Cream together the softened butter and sugar until light and fluffy in a separate bowl.
  4. Beat in the eggs, one at a time, then stir in the vanilla extract and milk.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped strawberries gently.
  7. Mix the cream cheese and powdered sugar until smooth in another bowl.
  8. Fill each muffin liner halfway with the batter, then drop a spoonful of the cream cheese mixture on top, followed by more batter to fill the liners about 3/4 full.
  9. Swirl the cream cheese into the batter slightly using a toothpick or knife.
  10. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to three days or freeze individually wrapped for longer storage.
