- 1 cup fresh strawberries, chopped
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 4 ounces cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, baking powder, and salt in a bowl.
- Cream together the softened butter and sugar until light and fluffy in a separate bowl.
- Beat in the eggs, one at a time, then stir in the vanilla extract and milk.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped strawberries gently.
- Mix the cream cheese and powdered sugar until smooth in another bowl.
- Fill each muffin liner halfway with the batter, then drop a spoonful of the cream cheese mixture on top, followed by more batter to fill the liners about 3/4 full.
- Swirl the cream cheese into the batter slightly using a toothpick or knife.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool for a few minutes before transferring to a wire rack.

Store in an airtight container at room temperature for up to three days or freeze individually wrapped for longer storage.
