Description

Spring Pea Soup Recipe TL;DR

Ingredients

Scale

2 cups fresh or frozen green peas (about 290g)

1 medium onion, diced (about ΒΎ cup)

2 cloves garlic, minced

4 cups low-sodium vegetable broth

Β½ cup heavy cream (optional)

Fresh mint or basil, chopped (2 tablespoons)

No heavy cream? Use full-fat coconut cream (β…“ cup) for a vegan version. The soup will have a slight coconut undertone

No onion? Substitute 1 medium leek (white and light green parts only), sliced thin. Leeks give a softer, more floral backbone.

No vegetable broth? Use water plus Β½ teaspoon kosher salt. The peas carry enough inherent flavor. I’ve done this in a pinch and was genuinely surprised by the result.

Instructions

  1. Step 1: SautΓ© the aromatics. Heat 1 tablespoon olive oil in a large pot over medium heat. Add diced onion. Stir occasionally for 4 minutes until the edges turn translucent. Add minced garlic, stir for 1 minute. You’ll smell the garlic sharpen and then mellow β€” pull the heat back if it starts to brown.
  2. Step 2: Toast the peas briefly. Stir in 2 cups of green peas. Cook for 3 minutes, tossing frequently. This brief dry contact with the hot pot drives off surface moisture and concentrates the peas’ natural sugars slightly β€” think of it less as browning and more as a quick warm-through that intensifies sweetness. If using frozen peas, add them directly β€” no thawing needed.
  3. Step 3: Simmer in broth. Pour in 4 cups low-sodium vegetable broth. Raise heat to bring the liquid to a boil, then immediately reduce to a gentle simmer. Cook for exactly 5 minutes. Set a timer. Every extra minute past 5 degrades that bright green color. I’ve tested 5, 10, and 20 minutes side by side β€” at 20 minutes the soup looked drab and tasted flat.
  4. Step 4: Blend until smooth. Remove the pot from heat. Insert an immersion blender at a slight angle and blend for 90 seconds to 2 minutes. Tilt the blender head to catch all chunks near the bottom. The soup should pour off a spoon in a steady, unbroken ribbon. For absolute smoothness, strain through a fine-mesh sieve β€” this removes approximately 1-2 tablespoons of pea fiber solids.
  5. Step 5: Add cream and season. Return the pot to low heat. Stir in Β½ cup heavy cream if using. Season with ΒΎ teaspoon Diamond Crystal kosher salt (or Β½ teaspoon Morton’s β€” they measure differently due to crystal size) and ΒΌ teaspoon freshly ground black pepper. Taste, then adjust. The soup should land slightly under-seasoned at this point because flavors concentrate as it cools toward eating temperature.
  6. Step 6: Serve and garnish. Ladle into bowls β€” you’ll get about 1Β½ cups (360ml) per serving. Top each with 1-2 teaspoons of chopped fresh mint or basil. A drizzle of good olive oil β€” about Β½ teaspoon per bowl β€” adds richness without the calories of extra cream.
