- 1 kg (2.2 lbs) bone-in, skin-on chicken thighs or breasts
- 120 ml (½ cup) hot honey
- 60 ml (¼ cup) soy sauce
- Juice of 1 lime
- 3 cloves minced garlic
- Olive oil, for marinating
Instructions
- Prepare the marinade: In a mixing bowl, combine hot honey, soy sauce, lime juice, and minced garlic. Whisk until blended.
- Marinate the chicken: Place chicken into a large zip-top bag, pour the marinade over, seal the bag, and refrigerate for at least 8 hours or overnight.
- Preheat the grill: Heat your grill to high, about 230°C (450°F), and preheat for at least 10 minutes.
- Grill the chicken: Remove chicken from the marinade, letting excess drip off. Place skin-side down on the grill. Cook for 5–7 minutes until golden brown and crispy.
- Flip and glaze: Turn the chicken over using tongs and brush with more hot honey. Grill for another 5–7 minutes or until the internal temperature reaches 74°C (165°F).
- Rest before serving: Remove the chicken from the grill and let it rest for 5 minutes before serving.
Notes
Avoid overcooking the chicken by monitoring the internal temperature closely. Marinating overnight enhances flavor.
