- to taste Freshly ground black pepper
- 1–2 tablespoons Extra-virgin olive oil
- 2 medium Yellow onions
- 1 pinch Kosher salt
- 1.5 pounds Ground beef (85/15)
- to taste Kosher salt
- to taste Freshly ground black pepper
- 2 tablespoons Unsalted butter (optional) (for toasting)
- 4 pieces Brioche buns
- 4 slices Gruyère, Swiss, or white cheddar cheese
- 2 cups Baby arugula
- 4 pieces Cornichons
Instructions
- In a small bowl, combine mayonnaise, cornichons, Dijon mustard, lemon juice, and black truffle oil. Season with salt and pepper to taste. Cover and refrigerate until you’re ready to indulge.
- Heat 1 to 2 tablespoons of extra-virgin olive oil in a large skillet over medium heat. Add thinly sliced yellow onions and a pinch of salt. Stir often, cooking for 30 to 40 minutes until golden and caramelized.
- Divide the ground beef into 12 equal portions, about 2½ to 3 ounces each. Gently roll each portion into a loose ball, ready to transform into juicy patties.
- Use a large cast iron skillet or griddle, and heat it over medium-high until hot. Carefully place 2 to 3 beef balls in the skillet, then smash each with a heavy spatula or burger press until very thin. Season with salt and pepper.
- Let them cook for 2 to 3 minutes, allowing the edges to crisp and brown. Flip the burgers, add a slice of cheese, and cook for another 1 to 2 minutes until melted and fully cooked. Transfer to a plate and repeat.
- Optionally, lightly butter the brioche buns and toast them cut-side down in the skillet until golden brown.
- Spread a generous spoonful of truffle sauce on the bottom bun. Layer on the baby arugula, two cheesy patties, and a spoonful of caramelized onions. Cap with the top bun, securing with a cornichon and toothpick. Repeat for all burgers.
