- 1 juiced lemon

- Pinch dried chili flakes

- Pinch black pepper
- 1 tbsp natural yogurt
- 1 tbsp mayonnaise
- 1/2 juiced lemon
- 4 pieces flatbreads
- 2 little gem lettuces shredded
- 1/2 piece cucumber
- 1 piece red pepper
- 150 g baby plum tomatoes
Instructions
- Lightly grease the interior of your slow cooker with olive oil and preheat on low.
- Place six large chicken thighs into the preheated slow cooker in a single layer.
- Drizzle olive oil and lemon juice over the chicken; mix spices and sprinkle over, massaging gently.
- Cover and cook on high for 3.5 to 4 hours until the internal temperature reaches 165°F.
- Mix yogurt, mayonnaise, and lemon juice to create a creamy dressing.
- Shred the chicken with two forks in the slow cooker; serve wrapped in flatbreads with veggies and dressing.
