- 1 pound Potatoes (cut into 1/2 inch chunks)
- 6 tablespoons Salted Butter
- Salt and Black Pepper (to taste)
- 2 tablespoons Grainy Dijon Mustard
- 1 tablespoon Dijon Mustard
- 2 tablespoons Lemon Juice
- 1 small Shallot (chopped)
- 2 tablespoons Fresh Chopped Thyme
- 1/2 teaspoon Cayenne Pepper
- 2 pounds Wild-Caught Salmon (or 4 fillets)
- 1/2 cup Panko Breadcrumbs
- 3 tablespoons Sesame Seeds
- 1 clove Garlic (chopped)
- 2–3 cups Arugula or Shaved Asparagus
- 1/4 cup Fresh Chopped Dill
Instructions
- Preheat your oven to 450°F.
- Toss the potato chunks on a baking sheet with 2 tablespoons of melted butter. Season generously with salt and pepper. Roast for about 15 minutes, or until golden and tender.
- Whisk together both types of mustard, lemon juice, shallot, cayenne, thyme, salt, pepper, and the remaining 4 tablespoons of melted butter in a bowl.
- Combine the cooked potatoes with panko, sesame seeds, and garlic. Arrange the salmon fillets on the baking sheet, then pour half of the Dijon dressing over the salmon. Bake for 10 minutes.
- Mix the arugula or shaved asparagus with dill in a bowl, adding 1-2 tablespoons of the remaining Dijon dressing. Season with salt and pepper.
- Spoon the rest of the dressing over the salmon, then serve everything on plates, topped with the greens.
