Roasted Tomato and Garlic Ricotta Pasta

Description

A delightful dish that combines the sweetness of roasted tomatoes with creamy ricotta, perfect for weeknight dinners or special occasions.


Ingredients

  • 8 oz pasta (your choice)
  • 2 cups cherry tomatoes
  • 4 cloves garlic, minced
  • 1 cup ricotta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss cherry tomatoes and minced garlic with olive oil, salt, and pepper in a baking dish. Roast in the oven for 20 minutes.
  3. Cook the pasta according to package directions until al dente.
  4. Reserve 1/2 cup of pasta water, then drain the pasta.
  5. Combine the cooked pasta, roasted tomatoes and garlic, and ricotta cheese in a large bowl. Mix well, adding reserved pasta water as needed to create a creamy sauce.
  6. Serve warm, garnished with fresh basil if desired.

Notes

For added flavor, try using different types of pasta or cheeses. Roasting the tomatoes enhances their sweetness. Reserve enough pasta water to help create a creamier sauce.
