Description

A simple and delicious roasted salmon and potatoes tray bake recipe.


Ingredients

Scale
  • 4 salmon fillets (about 6 ounces each)
  • 1 pound baby potatoes (halved)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme (or fresh thyme)
  • 1 teaspoon paprika
  • Salt and pepper (to taste)
  • 1 lemon (sliced)
  • 1 cup green beans (trimmed)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil.
  2. In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, dried thyme, paprika, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on the prepared baking sheet.
  4. Place the baking sheet in the oven and roast the potatoes for about 15 minutes until they start to soften.
  5. While the potatoes are roasting, season the salmon fillets with salt and pepper.
  6. Remove the baking sheet from the oven, push the potatoes to one side, and add the salmon fillets to the other side.
  7. Scatter the trimmed green beans around the salmon and potatoes, then place lemon slices on top of the salmon.
  8. Return the baking sheet to the oven and roast for an additional 10–15 minutes, or until the salmon is cooked through and flakes easily with a fork and the potatoes are golden and crispy.
  9. Remove from the oven, garnish with fresh parsley if desired, and serve hot.
