Description
A simple and delicious roasted salmon and potatoes tray bake recipe.

- 4 salmon fillets (about 6 ounces each)
- 1 pound baby potatoes (halved)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme (or fresh thyme)
- 1 teaspoon paprika
- Salt and pepper (to taste)
- 1 lemon (sliced)
- 1 cup green beans (trimmed)
- Fresh parsley (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil.
- In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, dried thyme, paprika, salt, and pepper until evenly coated.
- Spread the seasoned potatoes in a single layer on the prepared baking sheet.
- Place the baking sheet in the oven and roast the potatoes for about 15 minutes until they start to soften.
- While the potatoes are roasting, season the salmon fillets with salt and pepper.
- Remove the baking sheet from the oven, push the potatoes to one side, and add the salmon fillets to the other side.
- Scatter the trimmed green beans around the salmon and potatoes, then place lemon slices on top of the salmon.
- Return the baking sheet to the oven and roast for an additional 10–15 minutes, or until the salmon is cooked through and flakes easily with a fork and the potatoes are golden and crispy.
- Remove from the oven, garnish with fresh parsley if desired, and serve hot.
Notes
- Adjust the seasoning according to your taste.
- You can add other vegetables if preferred.
