A refreshing watermelon salad with feta and mint, perfect for summer gatherings.
Ingredients

- 1 medium Watermelon (about 1.5 kg / 3 lbs)
- 150 g Feta cheese (crumbled)
- 1/2 cup Fresh mint leaves (loosely packed)
- 60 ml Balsamic vinegar
- 30 ml Olive oil
- Salt and pepper to taste
Instructions
- Cube the Watermelon: Cut the watermelon in half, slice it into quarters, remove the rind, and dice into bite-sized cubes. Transfer to a large mixing bowl.
- Crumble the Feta: Use your hands or a fork to crumble the feta cheese over the watermelon.
- Add the Mint: Rinse and dry the mint leaves, tear into smaller pieces, and add to the bowl.
- Prepare the Dressing: Whisk together balsamic vinegar, olive oil, salt, and pepper in a small bowl.
- Combine All Ingredients: Pour the dressing over the salad mixture and gently toss until coated.
- Serve Immediately: Enjoy chilled or refrigerate for 30 minutes before serving.
Notes
For a vegan option, omit feta or substitute with vegan feta.
