Light and fluffy egg white bites packed with protein, filled with spinach and bell peppers. Perfect for a healthy snack or meal.

- 1 cup egg whites
- 1/2 cup cottage cheese
- 1/2 cup chopped spinach
- 1/4 cup diced bell peppers
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: shredded cheese for topping
- Optional: chopped herbs for garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray.
- Combine the egg whites and cottage cheese in a large mixing bowl. Whisk until smooth.
- Stir in the chopped spinach, diced bell peppers, salt, and black pepper. Mix until well combined.
- Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Sprinkle shredded cheese on top of each cup, if desired.
- Bake in the preheated oven for 15-18 minutes, or until the egg bites are firm and set in the center.
- Remove from the oven and let cool for a few minutes before carefully removing the bites from the tin.
- Garnish with chopped herbs if you wish and serve warm.
Notes
These bites can be stored in the refrigerator for up to a week or frozen for longer storage.
