Description

Light and fluffy egg white bites packed with protein, filled with spinach and bell peppers. Perfect for a healthy snack or meal.


Ingredients

  • 1 cup egg whites
  • 1/2 cup cottage cheese
  • 1/2 cup chopped spinach
  • 1/4 cup diced bell peppers
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: shredded cheese for topping
  • Optional: chopped herbs for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray.
  2. Combine the egg whites and cottage cheese in a large mixing bowl. Whisk until smooth.
  3. Stir in the chopped spinach, diced bell peppers, salt, and black pepper. Mix until well combined.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
  5. Sprinkle shredded cheese on top of each cup, if desired.
  6. Bake in the preheated oven for 15-18 minutes, or until the egg bites are firm and set in the center.
  7. Remove from the oven and let cool for a few minutes before carefully removing the bites from the tin.
  8. Garnish with chopped herbs if you wish and serve warm.

Notes

These bites can be stored in the refrigerator for up to a week or frozen for longer storage.
