Description

High-protein cottage cheese egg bake with eggs, cottage cheese, vegetables, herbs, and optional cheese.


Ingredients

4 large eggs

1 cup cottage cheese

1 cup chopped spinach, bell pepper, broccoli, or diced ham

1/4 cup shredded cheddar or feta, optional

Salt and black pepper, to taste

1 tablespoon chopped herbs, optional


Instructions

  1. Preheat the oven to 350 degrees F and grease a small baking dish or muffin tin.
  2. Blend eggs and cottage cheese until smooth.
  3. Stir in chopped vegetables, herbs, and optional cheese.
  4. Season with salt and black pepper.
  5. Pour into the prepared dish.
  6. Bake for 18 to 22 minutes, until set in the center.
  7. Cool briefly before slicing or removing from the pan.

Notes

Blend the cottage cheese with the eggs for the smoothest texture.
