4 large eggs
1 cup cottage cheese
1 cup chopped spinach, bell pepper, broccoli, or diced ham
1/4 cup shredded cheddar or feta, optional
Salt and black pepper, to taste
1 tablespoon chopped herbs, optional
Instructions
- Preheat the oven to 350 degrees F and grease a small baking dish or muffin tin.
- Blend eggs and cottage cheese until smooth.
- Stir in chopped vegetables, herbs, and optional cheese.
- Season with salt and black pepper.
- Pour into the prepared dish.
- Bake for 18 to 22 minutes, until set in the center.
- Cool briefly before slicing or removing from the pan.
