Description

A flavorful and healthier snack of mini peppers stuffed with a savory pizza filling of cheese, pepperoni, and Italian herbs.


Ingredients

  • 12 mini sweet peppers
  • 100 g (1 cup) mozzarella cheese
  • 50 g (½ cup) pepperoni, chopped
  • 1 tsp Italian seasoning
  • Salt & pepper, to taste

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Wash the mini peppers, then slice them in half lengthwise. Remove the seeds and membranes. Place them cut-side up on a baking sheet lined with parchment paper.
  3. In a mixing bowl, combine mozzarella cheese, pepperoni, and Italian seasoning. Season with salt and pepper to taste. Stir until well mixed.
  4. Spoon the filling evenly into each pepper half.
  5. Bake in the oven for 15-20 minutes, or until the cheese is bubbly and the peppers are tender.

Notes

For a vegetarian option, replace pepperoni with chopped mushrooms and spinach. Avoid overbaking to prevent sogginess.
