Description

Juicy oven-baked BBQ chicken brushed with quick homemade smoky-sweet sauce.


Ingredients

2 pounds bone-in chicken thighs or drumsticks

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

3/4 cup ketchup

2 tablespoons apple cider vinegar


Instructions

  1. Preheat the oven to 400 degrees F and line a baking sheet with foil.
  2. Pat chicken dry and rub with olive oil, smoked paprika, garlic powder, salt, and pepper.
  3. Bake chicken for 25 minutes.
  4. Simmer ketchup, vinegar, brown sugar, Worcestershire sauce, and Dijon for 5 minutes.
  5. Brush chicken with sauce and bake 10 minutes more.
  6. Brush again and bake 5 to 10 minutes, until the chicken reaches 165 degrees F.

Notes

For stickier BBQ chicken, broil for 1 to 2 minutes at the end while watching closely.
