A hearty and flavorful vegetable lasagna layered with rich marinara sauce and creamy cheese.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 3 cups spinach, chopped
- 2 cups mushrooms, sliced
- 1 zucchini, sliced
- 2 cups marinara sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Heat olive oil in a pan, and sauté the mushrooms and zucchini until tender.
- Add the chopped spinach, garlic powder, oregano, salt, and pepper. Cook until the spinach is wilted.
- Spread a layer of marinara sauce in the bottom of a 9×13 inch baking dish.
- Layer three lasagna noodles, half of the ricotta cheese, half of the vegetable mixture, and a third of the mozzarella.
- Repeat the layers, finishing with noodles, marinara sauce, and remaining mozzarella and Parmesan cheese on top.
- Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.
Notes
Feel free to add additional vegetables according to your preference. Pair with a fresh salad for a complete meal.
