Delicious Vegetable Lasagna

Description

A hearty and flavorful vegetable lasagna layered with rich marinara sauce and creamy cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 3 cups spinach, chopped
  • 2 cups mushrooms, sliced
  • 1 zucchini, sliced
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat olive oil in a pan, and sauté the mushrooms and zucchini until tender.
  4. Add the chopped spinach, garlic powder, oregano, salt, and pepper. Cook until the spinach is wilted.
  5. Spread a layer of marinara sauce in the bottom of a 9×13 inch baking dish.
  6. Layer three lasagna noodles, half of the ricotta cheese, half of the vegetable mixture, and a third of the mozzarella.
  7. Repeat the layers, finishing with noodles, marinara sauce, and remaining mozzarella and Parmesan cheese on top.
  8. Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for 10 minutes before slicing and serving.

Notes

Feel free to add additional vegetables according to your preference. Pair with a fresh salad for a complete meal.
