Description
Fresh orzo salad with tomatoes, cucumber, red onion, feta, olive oil, lemon juice, and herbs.
Ingredients

1 cup orzo pasta
2 cups water or salted boiling water as needed
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 cup red onion, diced
1/2 cup feta cheese, crumbled
1/4 cup olive oil
2 tablespoons lemon juice
Salt and black pepper, to taste
Fresh parsley or basil, for garnish
Instructions
- Cook orzo in salted boiling water until tender.
- Drain and rinse briefly under cool water.
- Add orzo, tomatoes, cucumber, red onion, and feta to a large bowl.
- Whisk olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss gently.
- Finish with fresh herbs and chill before serving if desired.
Notes
Rinse the orzo briefly so it stops cooking and does not clump before dressing.
