Orzo Salad Recipe (Fresh Pasta Salad)

Description

Fresh orzo salad with tomatoes, cucumber, red onion, feta, olive oil, lemon juice, and herbs.


Ingredients

Scale

1 cup orzo pasta

2 cups water or salted boiling water as needed

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 cup red onion, diced

1/2 cup feta cheese, crumbled

1/4 cup olive oil

2 tablespoons lemon juice

Salt and black pepper, to taste

Fresh parsley or basil, for garnish


Instructions

  1. Cook orzo in salted boiling water until tender.
  2. Drain and rinse briefly under cool water.
  3. Add orzo, tomatoes, cucumber, red onion, and feta to a large bowl.
  4. Whisk olive oil, lemon juice, salt, and pepper.
  5. Pour dressing over the salad and toss gently.
  6. Finish with fresh herbs and chill before serving if desired.

Notes

Rinse the orzo briefly so it stops cooking and does not clump before dressing.
