Orzo Salad Recipe (Fresh Mediterranean Pasta Salad)

Description

Fresh orzo salad with tomatoes, cucumber, red onion, feta, olive oil, lemon, and herbs.


Ingredients

Scale

1 cup orzo pasta

Salted boiling water, as needed

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 cup red onion, diced

1/2 cup feta cheese, crumbled

1/4 cup olive oil

2 tablespoons lemon juice

Salt and black pepper, to taste

Fresh parsley or basil, for garnish


Instructions

  1. Cook orzo in salted boiling water until tender.
  2. Drain and rinse under cool water.
  3. Add orzo, tomatoes, cucumber, red onion, and feta to a bowl.
  4. Whisk olive oil, lemon juice, salt, and pepper.
  5. Pour dressing over the salad.
  6. Toss gently.
  7. Garnish with parsley or basil and serve chilled or room temperature.

Notes

Cool the orzo before adding vegetables so the salad stays crisp.
