- 100 g (1/2 cup) of melted butter
- 500 g (18 oz) of cream cheese
- 150 g (3/4 cup) of sugar
- 1 teaspoon of vanilla extract
- 240 ml (1 cup) of heavy whipping cream
- 10 g (1 tablespoon) of gelatin
- 60 ml (1/4 cup) of warm water
- Fresh fruits for topping
Instructions
- Prepare the base by mixing crushed graham crackers and melted butter, then pressing into a springform pan.
- Make the filling by beating cream cheese, sugar, and vanilla until smooth.
- Whip the cream until soft peaks form, then fold it into the cream cheese mixture.
- Prepare the gelatin by blooming it in warm water and whisking it into the filling.
- Assemble the dessert by pouring the filling over the crust and refrigerating it.
- Serve with fresh fruit toppings once set.
Notes
Ensure cream cheese is at room temperature to avoid lumps. This cheesecake can be made a day in advance.
