Description

A refreshing no-bake cheesecake that combines cream cheese and seasonal fruits for a perfect summer dessert.


Ingredients

  • 100 g (1/2 cup) of melted butter
  • 500 g (18 oz) of cream cheese
  • 150 g (3/4 cup) of sugar
  • 1 teaspoon of vanilla extract
  • 240 ml (1 cup) of heavy whipping cream
  • 10 g (1 tablespoon) of gelatin
  • 60 ml (1/4 cup) of warm water
  • Fresh fruits for topping

Instructions

  1. Prepare the base by mixing crushed graham crackers and melted butter, then pressing into a springform pan.
  2. Make the filling by beating cream cheese, sugar, and vanilla until smooth.
  3. Whip the cream until soft peaks form, then fold it into the cream cheese mixture.
  4. Prepare the gelatin by blooming it in warm water and whisking it into the filling.
  5. Assemble the dessert by pouring the filling over the crust and refrigerating it.
  6. Serve with fresh fruit toppings once set.

Notes

Ensure cream cheese is at room temperature to avoid lumps. This cheesecake can be made a day in advance.
