Description

Quick chicken avocado wraps with shredded chicken, ripe avocado, red onion, cilantro, lime, greens, and tortillas.


Ingredients

2 cups cooked shredded chicken

1 large ripe avocado, diced

2 tablespoons finely diced red onion

2 tablespoons chopped cilantro

1 tablespoon lime juice

2 tablespoons mayonnaise or Greek yogurt, optional

Salt and black pepper, to taste

4 large tortillas

2 cups mixed salad greens


Instructions

  1. Mix shredded chicken, avocado, red onion, cilantro, lime juice, and mayonnaise or Greek yogurt if using.
  2. Season with salt and black pepper.
  3. Warm tortillas briefly so they roll without tearing.
  4. Layer greens on each tortilla.
  5. Add the chicken avocado filling.
  6. Fold in the sides, roll tightly, slice, and serve.

Notes

For meal prep, keep the filling and tortillas separate until serving so the wraps do not become soggy.
