Description

Ingredients

  • 4 medium cucumbers, sliced
  • 2 large ripe tomatoes, diced
  • ½ small red onion, thinly sliced
  • Juice of 2 limes
  • 1 teaspoon chili powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prepare the vegetables by washing the cucumbers and tomatoes; slice the cucumbers and dice the tomatoes. Set aside in a mixing bowl.
  2. Slice the onion thinly; soak in cold water for 5 minutes if desired.
  3. Add the sliced cucumbers, diced tomatoes, and red onion to the bowl. Squeeze lime juice over the salad, then add chili powder, salt, and pepper.
  4. Toss gently until well mixed, making sure cucumbers are coated with juices and spices.
  5. Taste and adjust seasoning as necessary.

Notes
