- 4 medium cucumbers, sliced
- 2 large ripe tomatoes, diced
- ½ small red onion, thinly sliced
- Juice of 2 limes

Instructions
- Prepare the vegetables by washing the cucumbers and tomatoes; slice the cucumbers and dice the tomatoes. Set aside in a mixing bowl.
- Slice the onion thinly; soak in cold water for 5 minutes if desired.
- Add the sliced cucumbers, diced tomatoes, and red onion to the bowl. Squeeze lime juice over the salad, then add chili powder, salt, and pepper.
- Toss gently until well mixed, making sure cucumbers are coated with juices and spices.
- Taste and adjust seasoning as necessary.
Notes
For extra crunch, let cucumbers sit in a colander to remove moisture before mixing. Prepare up to an hour in advance, adding lime juice just before serving.
