Ingredients

- 2 bell peppers, chopped
- 1 zucchini, chopped
- 120 ml (½ cup) olive oil
- Juice of 2 lemons
- 4 cloves garlic, minced
- Salt and pepper to taste
- Spices of choice (e.g., taco seasoning, BBQ rub)
- Buns (optional, for serving)
Instructions
- Prepare the Marinade by mixing olive oil, lemon juice, garlic, and spices in a large bowl.
- Marinate the chicken in the mixture for at least 1 hour in the refrigerator.
- Preheat the grill to medium-high heat (200°C/400°F).
- Chop vegetables and toss them with olive oil, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side until cooked through.
- Grill the vegetables for about 8-10 minutes until tender and charred.
- Serve the grilled chicken and vegetables with your favorite sides.
Notes
