  • 900 g (2 lbs) chicken
  • Salt and pepper
  • 240 ml (1 cup) Greek yogurt
  • 60 ml (¼ cup) tahini
  • Lemon juice
  • Garlic
  • 300 g (2 cups) quinoa
  • 250 g (2 cups) sugar
  • 113 g (½ cup) butter
  • 3 large eggs
  • 250 g (2 cups) all-purpose flour

Instructions

  1. Prepare the salad by tossing together your choice of greens and seasonal vegetables. Chill for at least 20 minutes.
  2. Cook the chicken, seasoning with salt and pepper, and bake at 190°C (375°F) for 25-30 minutes.
  3. Make the dipping sauce by mixing Greek yogurt, tahini, lemon juice, and garlic, and chill for at least 30 minutes.
  4. Prepare the quinoa according to package instructions and let cool.
  5. Bake the cake by creaming sugar and butter, adding eggs one at a time, then folding in flour. Bake at 180°C (350°F) for 30-35 minutes.
  6. Assemble everything on a table and ensure cold dishes are kept on ice.
