Instructions
- Cook the macaroni according to package instructions until al dente. Drain and rinse under cold water.
- Blanch the asparagus in a pot of boiling water for about 1-2 minutes until bright green and tender-crisp. Remove and transfer to a bowl of ice water.
- Whisk together the Dijon mustard, lemon juice, olive oil, salt, and pepper in a small bowl to create the dressing.
- Combine the cooked macaroni, blanched asparagus, and peas in a large mixing bowl. Pour the dressing over the salad and toss to coat evenly.
- Serve chilled or at room temperature, garnished with fresh herbs if desired.
