Ingredients

  • 8 oz pasta (regular or chickpea)
  • 1 box cherry tomatoes
  • 2 to 3 cups spinach
  • 1 Boursin cheese (garlic and herbs style)
  • 1 lemon (zest and juice)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F. Add the cherry tomatoes to a baking dish and drizzle with olive oil, salt, and pepper.
  2. Nestle the Boursin cheese in the middle of the tomatoes. Bake for about 25 minutes until the tomatoes burst.
  3. While the tomatoes bake, cook the pasta according to package instructions.
  4. Once the baking is done, pull the dish out of the oven, add the spinach to wilt, and stir everything together to create a creamy sauce.
  5. Add lemon zest and a squeeze of lemon juice, then toss with the cooked pasta.

Notes

For a spicier kick, consider adding red pepper flakes. Mix in additional vegetables like zucchini or bell peppers for more flavor. A bit of cream or milk can make the sauce richer.
