- 8 oz pasta (regular or chickpea)
- 1 box cherry tomatoes
- 2 to 3 cups spinach
- 1 Boursin cheese (garlic and herbs style)
- 1 lemon (zest and juice)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F. Add the cherry tomatoes to a baking dish and drizzle with olive oil, salt, and pepper.
- Nestle the Boursin cheese in the middle of the tomatoes. Bake for about 25 minutes until the tomatoes burst.
- While the tomatoes bake, cook the pasta according to package instructions.
- Once the baking is done, pull the dish out of the oven, add the spinach to wilt, and stir everything together to create a creamy sauce.
- Add lemon zest and a squeeze of lemon juice, then toss with the cooked pasta.
Notes
For a spicier kick, consider adding red pepper flakes. Mix in additional vegetables like zucchini or bell peppers for more flavor. A bit of cream or milk can make the sauce richer.
