Description

Creamy lemon Boursin pasta bake with cherry tomatoes, spinach, olive oil, and garlic herb cheese.


Ingredients

8 ounces pasta, regular or chickpea

1 box cherry tomatoes

2 to 3 cups spinach

1 Boursin cheese, garlic and herbs style

1 lemon, zested and juiced

2 tablespoons olive oil

Salt and black pepper, to taste


Instructions

  1. Preheat oven to 400 degrees F.
  2. Add cherry tomatoes to a baking dish.
  3. Drizzle with olive oil, salt, and pepper.
  4. Place Boursin cheese in the center.
  5. Bake about 25 minutes until tomatoes burst.
  6. Cook pasta according to package directions.
  7. Add spinach to the hot baking dish and stir until wilted.
  8. Add lemon zest and lemon juice.
  9. Toss with cooked pasta until creamy.

Notes

Reserve a little pasta water so the sauce can loosen if it gets too thick.
