1 cup All-purpose flour
1/2 cup Graham crackers, finely crushed

Instructions
- Whisk together the almond milk, Greek yogurt, and lime juice in a medium-large bowl until smooth. Let it sit for a few minutes to thicken.
- Crush the graham crackers into fine crumbs using a rolling pin or a food processor.
- Combine in a separate bowl the flour, finely crushed graham crackers, sugar, baking powder, baking soda, and salt. Stir well.
- Heat up your griddle or skillet over medium heat and lightly grease it.
- Add the melted coconut oil and eggs to the thickened wet ingredients. Whisk until fully incorporated.
- Incorporate the dry ingredients into the wet mix by sifting 1/3 of the flour mixture into the bowl, gently stirring to combine.
Notes
For a healthier option, substitute whole wheat flour for all-purpose flour. Adjust the sugar to taste based on your preference. Use fresh lime zest for added flavor in the whipped cream.
