Description
Low-carb ketogenic Greek salad with cucumber, tomatoes, red onion, Kalamata olives, feta, olive oil, vinegar, and oregano.
Ingredients

2 cups cucumber, chopped
1 cup tomatoes, chopped
1/4 cup red onion, thinly sliced
1/2 cup Kalamata olives
3/4 cup feta cheese, cubed or crumbled
3 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon dried oregano
Salt and black pepper, to taste
Optional: avocado, grilled chicken, tuna, or eggs
Instructions
- Add cucumber, tomatoes, red onion, olives, and feta to a large bowl.
- Whisk olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour dressing over the salad.
- Toss gently so the feta stays mostly intact.
- Rest 10 minutes if desired so the onion mellows.
- Serve cold or at cool room temperature.
Notes
Keep the salad keto-friendly by avoiding croutons, pita, pasta, honey, and sweet bottled dressings.
