Description

Low-carb ketogenic Greek salad with cucumber, tomatoes, red onion, Kalamata olives, feta, olive oil, vinegar, and oregano.


Ingredients

Scale

2 cups cucumber, chopped

1 cup tomatoes, chopped

1/4 cup red onion, thinly sliced

1/2 cup Kalamata olives

3/4 cup feta cheese, cubed or crumbled

3 tablespoons extra virgin olive oil

1 tablespoon red wine vinegar

1 teaspoon dried oregano

Salt and black pepper, to taste

Optional: avocado, grilled chicken, tuna, or eggs


Instructions

  1. Add cucumber, tomatoes, red onion, olives, and feta to a large bowl.
  2. Whisk olive oil, red wine vinegar, oregano, salt, and pepper.
  3. Pour dressing over the salad.
  4. Toss gently so the feta stays mostly intact.
  5. Rest 10 minutes if desired so the onion mellows.
  6. Serve cold or at cool room temperature.

Notes

Keep the salad keto-friendly by avoiding croutons, pita, pasta, honey, and sweet bottled dressings.
