Ingredients

- 1 small pack (or half of a large pack) sugar-free, fat-free strawberry Jello
- 1 cup boiling water
- ¼ cup fresh strawberries, finely chopped
- 1 cup heavy cream (or coconut cream for a dairy-free option)
- ¼ cup walnuts, crushed
- ¼ cup Lily’s sugar-free baking chocolate chips
- 1–2 tablespoons heavy cream (or coconut cream for a dairy-free option)
Instructions
- Pour the boiling water over the sugar-free Jello powder in a heat-safe bowl. Stir continuously for about 2 minutes until completely dissolved.
- Allow the Jello mixture to cool for approximately 10-15 minutes until it reaches room temperature.
- Finely chop your fresh strawberries while the Jello cools.
- Whisk in the heavy cream into the cooled Jello until completely combined.
- Fold in the chopped strawberries, ensuring even distribution.
- Pour the mixture into popsicle molds, leaving about ¼ inch of space at the top.
- Insert popsicle sticks and place in the freezer for at least 4 hours or overnight.
- Prepare the topping by combining Lily’s chocolate chips and 1 tablespoon of heavy cream in a microwave-safe bowl. Microwave in 15-second intervals until melted and smooth.
- Dip the top portion of each popsicle into the melted chocolate mixture, then immediately into the crushed walnuts.
- Allow the chocolate to set for 1-2 minutes before serving.
Notes
For a fizzy twist, add a splash of sparkling water before pouring into molds. You can substitute other nuts or berries for variety.
