Ingredients

  • 1 small pack (or half of a large pack) sugar-free, fat-free strawberry Jello
  • 1 cup boiling water
  • ¼ cup fresh strawberries, finely chopped
  • 1 cup heavy cream (or coconut cream for a dairy-free option)
  • ¼ cup walnuts, crushed
  • ¼ cup Lily’s sugar-free baking chocolate chips
  • 12 tablespoons heavy cream (or coconut cream for a dairy-free option)

Instructions

  1. Pour the boiling water over the sugar-free Jello powder in a heat-safe bowl. Stir continuously for about 2 minutes until completely dissolved.
  2. Allow the Jello mixture to cool for approximately 10-15 minutes until it reaches room temperature.
  3. Finely chop your fresh strawberries while the Jello cools.
  4. Whisk in the heavy cream into the cooled Jello until completely combined.
  5. Fold in the chopped strawberries, ensuring even distribution.
  6. Pour the mixture into popsicle molds, leaving about ¼ inch of space at the top.
  7. Insert popsicle sticks and place in the freezer for at least 4 hours or overnight.
  8. Prepare the topping by combining Lily’s chocolate chips and 1 tablespoon of heavy cream in a microwave-safe bowl. Microwave in 15-second intervals until melted and smooth.
  9. Dip the top portion of each popsicle into the melted chocolate mixture, then immediately into the crushed walnuts.
  10. Allow the chocolate to set for 1-2 minutes before serving.

Notes

For a fizzy twist, add a splash of sparkling water before pouring into molds. You can substitute other nuts or berries for variety.
