Description

Creamy street corn dip with charred corn, cream cheese, sour cream, lime, chili powder, cheddar, green onions, and cilantro.


Ingredients

4 ears fresh corn, or 3 cups thawed frozen corn

8 ounces cream cheese, softened

1/2 cup sour cream or Greek yogurt

1 teaspoon chili powder

2 tablespoons fresh lime juice

1/4 cup chopped green onions

1/4 cup chopped cilantro

1 cup shredded sharp cheddar cheese

Salt, to taste


Instructions

  1. Cut kernels from the corn if using fresh corn.
  2. Char corn in a dry skillet over high heat for about 6 minutes.
  3. Beat cream cheese and sour cream until smooth.
  4. Stir in chili powder, lime juice, and salt.
  5. Fold in charred corn, cheddar, green onions, and cilantro.
  6. Transfer to a serving bowl.
  7. Garnish with more cilantro or chili powder and serve.

Notes

Char the corn for deeper flavor, but avoid burning it black.
