Ingredients

4 ears fresh corn, or 3 cups thawed frozen corn
8 ounces cream cheese, softened
1/2 cup sour cream or Greek yogurt
1 teaspoon chili powder
2 tablespoons fresh lime juice
1/4 cup chopped green onions
1/4 cup chopped cilantro
1 cup shredded sharp cheddar cheese
Salt, to taste
Instructions
- Cut kernels from the corn if using fresh corn.
- Char corn in a dry skillet over high heat for about 6 minutes.
- Beat cream cheese and sour cream until smooth.
- Stir in chili powder, lime juice, and salt.
- Fold in charred corn, cheddar, green onions, and cilantro.
- Transfer to a serving bowl.
- Garnish with more cilantro or chili powder and serve.
Notes
Char the corn for deeper flavor, but avoid burning it black.
