- 1 cup Cucumber (Diced)

- ½ cup Lime Juice (Can substitute with lemon juice)
Instructions
- Marinate the shrimp by combining with honey, chipotle seasoning, and garlic. Let sit for 5–10 minutes.
- Cook the shrimp in a skillet over medium-high heat for 3–4 minutes on each side until pink and opaque.
- Prepare the mango salsa by combining diced mango, cucumber, coriander, and lime juice. Season with salt.
- Warm the tortillas in the same skillet for about 30 seconds on each side.
- Assemble the tacos by placing shrimp in tortillas and topping with mango salsa.
- Serve immediately with lime wedges for added acidity.
