Description

Soft golden homemade cornbread made with cornmeal, flour, buttermilk, butter, eggs, and honey.


Ingredients

1 cup yellow cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

2 large eggs

1/3 cup melted unsalted butter

2 tablespoons honey or sugar


Instructions

  1. Preheat the oven to 400 degrees F and grease an 8-inch square pan or loaf pan.
  2. Whisk cornmeal, flour, baking powder, and salt in a large bowl.
  3. Whisk buttermilk, eggs, melted butter, and honey in a second bowl.
  4. Fold the wet ingredients into the dry ingredients just until combined.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 22 to 28 minutes, until golden and a toothpick comes out clean.
  7. Cool for 10 minutes before slicing.

Notes

Do not overmix the batter. A few small lumps help the cornbread stay tender.
