Soft golden homemade cornbread made with cornmeal, flour, buttermilk, butter, eggs, and honey.

1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup buttermilk
2 large eggs
1/3 cup melted unsalted butter
2 tablespoons honey or sugar
Instructions
- Preheat the oven to 400 degrees F and grease an 8-inch square pan or loaf pan.
- Whisk cornmeal, flour, baking powder, and salt in a large bowl.
- Whisk buttermilk, eggs, melted butter, and honey in a second bowl.
- Fold the wet ingredients into the dry ingredients just until combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 22 to 28 minutes, until golden and a toothpick comes out clean.
- Cool for 10 minutes before slicing.
Notes
Do not overmix the batter. A few small lumps help the cornbread stay tender.
