Description

Hearty high-protein taco soup with lean meat, beans, corn, tomatoes, broth, and taco seasoning.

Ingredients

Scale

1 pound lean ground turkey or lean beef

1 onion, chopped

2 to 3 cloves garlic, minced

1 can black beans, rinsed and drained

1 can pinto beans, rinsed and drained

1 can corn, drained or frozen corn

1 can diced tomatoes

1 small can tomato sauce

4 cups chicken broth

1 to 2 tablespoons taco seasoning

Salt and black pepper, to taste

Optional: Greek yogurt, extra beans, or unflavored protein powder

Instructions

  1. Brown ground turkey or beef with onion in a large pot.
  2. Add garlic and cook for about 30 seconds.
  3. Stir in taco seasoning, diced tomatoes, tomato sauce, broth, beans, and corn.
  4. Bring to a gentle boil.
  5. Reduce heat and simmer 20 to 25 minutes.
  6. Mash about 1/2 cup beans and stir them back in to thicken.
  7. Taste and adjust salt, pepper, or seasoning.
  8. Serve hot with toppings.

Notes

Mashing a small amount of beans thickens the soup without cream.
