Description
A delicious and hearty taco soup loaded with protein, perfect for a quick meal or gathering.
Ingredients

- 1 pound lean ground turkey or lean beef
- 1 onion, chopped
- 2 to 3 cloves garlic, minced
- 1 can black beans, rinsed and drained
- 1 can pinto beans, rinsed and drained
- 1 can corn, drained (or frozen corn)
- 1 can diced tomatoes
- 1 small can tomato sauce
- 4 cups chicken broth
- 1 to 2 tablespoons taco seasoning
- Salt and pepper to taste
- Optional for extra protein: plain Greek yogurt, extra beans, or unflavored protein powder
Instructions
- Brown the meat with onion in a big pot, then add garlic for about 30 seconds.
- Stir in taco seasoning, tomatoes, tomato sauce, broth, beans, and corn.
- Bring to a gentle boil, then lower heat and let it simmer for 20 to 25 minutes.
- Taste and adjust salt, pepper, or seasoning.
- Mash about half a cup of beans with a fork and stir them back in to thicken the soup.
Notes
For added flavor, try browning the meat with spices before adding onions and garlic. You can add jalapeños for heat or fresh lime for a twist.
