Ingredients

2 medium zucchini
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
Optional: Parmesan cheese
Optional: lemon juice and fresh herbs
Instructions
- Preheat grill to medium heat.
- Slice zucchini into 1/4 inch thick slices.
- Toss zucchini with olive oil, salt, pepper, and garlic powder.
- Place zucchini slices on the grill.
- Cook 4 to 5 minutes per side until tender with grill marks.
- Sprinkle with Parmesan, lemon, or herbs if desired.
- Serve warm.
