Description

Tender grilled zucchini with olive oil, garlic powder, salt, pepper, and optional Parmesan.


Ingredients

Scale

2 medium zucchini

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

Optional: Parmesan cheese

Optional: lemon juice and fresh herbs


Instructions

  1. Preheat grill to medium heat.
  2. Slice zucchini into 1/4 inch thick slices.
  3. Toss zucchini with olive oil, salt, pepper, and garlic powder.
  4. Place zucchini slices on the grill.
  5. Cook 4 to 5 minutes per side until tender with grill marks.
  6. Sprinkle with Parmesan, lemon, or herbs if desired.
  7. Serve warm.

Notes

Slice zucchini evenly so the pieces cook at the same pace.
