Ingredients

  • 4 skinless, boneless chicken breasts
  • 60 ml (¼ cup) olive oil
  • 30 ml (2 tablespoons) lemon juice
  • 2 cloves garlic, minced
  • 5 g (1 teaspoon) dried oregano
  • Salt to taste
  • Pepper to taste

Instructions

  1. Marinate the chicken: In a bowl or resealable plastic bag, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Mix well and coat the chicken. Marinate for at least 30 minutes or up to 2 hours.
  2. Preheat the grill: Heat your grill to medium-high, about 200°C (400°F), ensuring the grates are clean and lightly oiled.
  3. Grill the chicken: Remove the chicken from the marinade, letting excess drip off. Place on the grill and cook for 5–7 minutes per side until it reaches an internal temperature of 74°C (165°F).
  4. Rest the chicken: Remove from the grill and let rest on a cutting board for about 5 minutes before slicing.

Notes

For optimal flavor, marinate the chicken the night before. Always slice against the grain for a tender texture.
