Delicious Vegetarian Lasagna

Description

A hearty and flavorful vegetarian lasagna filled with fresh vegetables and creamy cheese layers.


Ingredients

  • 12 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 2 cups spinach
  • 2 cups ricotta cheese
  • 3 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Heat olive oil in a pan over medium heat, then sauté onion and garlic until fragrant.
  4. Add zucchini, bell pepper, and spinach; cook until vegetables are tender.
  5. In a bowl, combine ricotta cheese, Italian seasoning, salt, and pepper.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
  7. Layer noodles, ricotta mixture, sautéed vegetables, mozzarella, and more marinara.
  8. Repeat layers until all ingredients are used, finishing with mozzarella and Parmesan on top.
  9. Bake for 30-35 minutes or until cheese is bubbly and golden.
  10. Let it cool for 10 minutes before serving.

Notes

For extra flavor, add fresh basil or oregano in the layers.
