Ingredients

1 head green cabbage, chopped
1 pound ground beef, pork, or turkey
1 onion, chopped
3 cloves garlic, minced
1 cup white rice, small pasta, or barley
1 can crushed tomatoes or tomato sauce, 28 ounces
4 cups beef broth or chicken broth
1 teaspoon paprika
Salt and black pepper, to taste
1 pinch sugar
1 to 2 tablespoons lemon juice or vinegar
Instructions
- Brown the ground meat in a large pot over medium heat.
- Add onion and garlic and cook until fragrant.
- Stir in chopped cabbage, tomatoes, broth, paprika, salt, pepper, and sugar.
- Bring to a simmer.
- Add rice, pasta, or barley and cook until tender.
- Finish with lemon juice or vinegar.
- Taste and adjust seasoning before serving.
Notes
Add lemon juice or vinegar at the end so the soup tastes bright instead of flat.
