Description

Comforting golumpki soup with cabbage, ground meat, rice, tomatoes, broth, paprika, and a bright acidic finish.


Ingredients

1 head green cabbage, chopped

1 pound ground beef, pork, or turkey

1 onion, chopped

3 cloves garlic, minced

1 cup white rice, small pasta, or barley

1 can crushed tomatoes or tomato sauce, 28 ounces

4 cups beef broth or chicken broth

1 teaspoon paprika

Salt and black pepper, to taste

1 pinch sugar

1 to 2 tablespoons lemon juice or vinegar


Instructions

  1. Brown the ground meat in a large pot over medium heat.
  2. Add onion and garlic and cook until fragrant.
  3. Stir in chopped cabbage, tomatoes, broth, paprika, salt, pepper, and sugar.
  4. Bring to a simmer.
  5. Add rice, pasta, or barley and cook until tender.
  6. Finish with lemon juice or vinegar.
  7. Taste and adjust seasoning before serving.

Notes

Add lemon juice or vinegar at the end so the soup tastes bright instead of flat.
