Crisp, beautifully spiced gingerbread cookies shaped as ornaments, decorated with royal icing. Perfect for hanging on the tree or gifting.

- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon baking soda

- 6 tablespoons unsalted butter, softened
- 1/2 cup dark brown sugar, packed
- 1/2 cup dark molasses
- 1 large egg
- 1 teaspoon vanilla extract
- Royal Icing: 2 cups powdered sugar
- 1 tablespoon meringue powder
- 3 tablespoons warm water
- Gel food coloring (optional)
Instructions
- Whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt in a large bowl.
- In another bowl, beat softened butter and brown sugar until combined, about 2 minutes. Mix in molasses, egg, and vanilla.
- Add dry ingredients to wet in two additions, mixing until a stiff dough forms.
- Divide dough in half, flatten each into a disc. Wrap in plastic wrap and chill at least 1 hour.
- Roll dough on a floured surface to 1/4 inch thickness. Cut into festive shapes. Use a straw to poke a hole near the top of each cookie.
- Place on parchment-lined baking sheets, 1 inch apart. Bake at 350°F (175°C) for 9-11 minutes.
- Cool completely on a wire rack before decorating.
- Make royal icing: Beat powdered sugar, meringue powder, and warm water on medium for 5 minutes. Outline cookies, let set 15 minutes, then flood with thinned icing. Dry 6-8 hours. Thread ribbon through hole.
Notes
Chill the dough for at least 1 hour — cold dough holds shapes perfectly. Make the ornament holes bigger than you think, as they shrink during baking. Let royal icing dry overnight before stacking.
