Description

Crisp, beautifully spiced gingerbread cookies shaped as ornaments, decorated with royal icing. Perfect for hanging on the tree or gifting.


Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, softened
  • 1/2 cup dark brown sugar, packed
  • 1/2 cup dark molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Royal Icing: 2 cups powdered sugar
  • 1 tablespoon meringue powder
  • 3 tablespoons warm water
  • Gel food coloring (optional)

Instructions

  1. Whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt in a large bowl.
  2. In another bowl, beat softened butter and brown sugar until combined, about 2 minutes. Mix in molasses, egg, and vanilla.
  3. Add dry ingredients to wet in two additions, mixing until a stiff dough forms.
  4. Divide dough in half, flatten each into a disc. Wrap in plastic wrap and chill at least 1 hour.
  5. Roll dough on a floured surface to 1/4 inch thickness. Cut into festive shapes. Use a straw to poke a hole near the top of each cookie.
  6. Place on parchment-lined baking sheets, 1 inch apart. Bake at 350°F (175°C) for 9-11 minutes.
  7. Cool completely on a wire rack before decorating.
  8. Make royal icing: Beat powdered sugar, meringue powder, and warm water on medium for 5 minutes. Outline cookies, let set 15 minutes, then flood with thinned icing. Dry 6-8 hours. Thread ribbon through hole.

Notes

Chill the dough for at least 1 hour — cold dough holds shapes perfectly. Make the ornament holes bigger than you think, as they shrink during baking. Let royal icing dry overnight before stacking.
